Roasted Cauliflower with Tahini
Ingredients
- 1 large head of cauliflower
- 3 tablespoons olive oil
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
- 2 tablespoons chopped parsley
- 1 teaspoon smoked paprika
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the cauliflower into florets and toss with olive oil, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
- In a small bowl, whisk together the tahini, lemon juice, garlic, and a bit of water to reach a drizzling consistency.
- Drizzle the tahini sauce over the roasted cauliflower.
- Sprinkle with smoked paprika and chopped parsley before serving.
